Artichoke Dip:
1/2 c sliced water chestnuts
2 c. frozen artichokes
6 oz. cream cheese
1/4 c. sour cream
1/2 c. shaved parmesan cheese
1 tsp red pepper flakes
1/2 tsp. Knorr vegetable base
1/4 tsp. granulated garlic
1/4 c. mayo
1 c. each shredded Dill Havarti and provolone cheeses
Procedure:
Blend first 9 ingredients in food processor. Fold in by hand the two types of cheese.
Heat in microwave 1.5 – 2 minutes. Stir, check to see if dip is hot, repeat as needed. Serve with tortilla chips. |

Competitive Season off to Great Start
 Repeat Champs in Two Person Spring Classic
The 2011 Kickoff event was a nail-biter, ending with a four team scorecard playoff. The top score of 66 was shared by Denman/Denman, Lubnik/Ulep, Dempsey/Post, and Boughan/Chastain. The contest was ultimately decided by a scorecard playoff, giving the victory to Booth Boughan and Chad Chastain. The Boughan/Chastain team is the first to successfully challenge the Spring Classic. The tournament champions earned Cantigny gift cards and will have their names added, once again, to the Colonel‘s Cup trophy which resides in the clubhouse. Friday Evening Competitive League Already a Hot Ticket
The inaugural session of the Friday evening Competitive League started with a bang as 33 golfers braved the difficult playing conditions to complete their first 9-hole match.
The League takes place on the 2nd and 4th Fridays of each month and will be played in a 9-hole format beginning at 5:00pm. The next event will be on Friday, May 27. The League is casually formatted, with different forms of play each time. As for prizes? Losers will buy a drink for the winners following the round.
